The Bulgarian Food Safety Agency (BFSA) has intensified inspections across fish markets and shops nationwide as demand surges for fresh fish ahead of the holiday season. These inspections, which cover every stage of the supply chain—from production and mining sites to small market stalls—aim to ensure product safety and quality.

“First of all, the origin of the fish. At every stage of the offer, it must be accompanied by documents,” said Bistra Ivanova from the BFSA. Documentation verifying the source of fish is crucial to maintain traceability and prevent the circulation of unregulated products.

The agency has also emphasized the importance of proper storage and presentation to guarantee freshness. Fresh fish displayed on market stands must be entirely covered in ice. Inspectors are trained to assess the freshness of fish using specific visual and tactile criteria.

“The eyes traditionally appear clear, bulging, transparent with no mucus, no secretions, and no opacification,” Ivanova explained. “The gills should be pale pink initially, naturally reddening over time due to oxidation. Scales must remain tightly attached to the body, and the consistency of the fish should quickly recover when pressure is applied.”

In addition to product inspections, the BFSA is examining the hygienic conditions of the sites, health records of the staff, and whether employees have undergone proper training on the risks associated with handling fish. These comprehensive checks aim to protect public health and reinforce consumer confidence in the products available during the festive season.

According to traders, holiday preparations have already boosted fish sales. Vendors are eager to comply with the heightened inspections, recognizing the importance of food safety during a peak period. “Customers are more discerning this time of year, so ensuring quality is as much in our interest as it is in theirs,” said a market stall operator in Sofia.

The agency’s efforts coincide with increasing awareness among consumers about food safety and freshness, with many shoppers actively inspecting fish before making purchases. “It’s reassuring to know these checks are happening,” commented a customer at a local fish market. “I always look at the eyes and gills before buying.”

The BFSA has urged consumers to remain vigilant, advising them to verify documentation for their purchases and to report any irregularities. Officials stressed that compliance from both traders and consumers is critical to maintaining high standards in food safety.

The festive season is traditionally a time of increased fish consumption in Bulgaria, with many households including it as a centerpiece for holiday meals. BFSA’s proactive measures are designed to uphold traditions while safeguarding public health.

As the inspections continue, the agency plans to release detailed findings, ensuring transparency in its operations and providing further guidelines for traders to meet regulatory requirements. These efforts are expected to play a vital role in ensuring a safe and enjoyable holiday season for Bulgarians across the country.
